Ingredients

  • 2 eggplants
  • 2 eggs
  • as needed all-purpose flour
  • as needed breadcrumbs
  • 1 pinch salt
  • as needed extra virgin olive oil

Steps

To prepare crispy eggplants in the air fryer, start by washing the eggplants. Remove the ends and dry them carefully. Slice the eggplants into slices about 0.4 inches thick and then cut them into sticks about 2.8 inches long.

Take three bowls: in the first, pour the flour, in the second the breadcrumbs, and in the last the beaten eggs with a pinch of salt.

Coat the eggplant sticks in flour, then dip them one by one in the beaten egg and finally in the breadcrumbs, ensuring an even coat.

Place the sticks in the air fryer basket and drizzle with a thin stream of oil or alternatively spray the oil using the dedicated sprayer.

Cook at 347°F for 12 minutes, until they are nicely golden and crispy. Halfway through cooking, gently turn them with a wooden spoon.
