Ingredients

  • 3 zucchini
  • 2 eggs
  • as needed all-purpose flour
  • as needed breadcrumbs
  • 1 pinch salt
  • as needed extra virgin olive oil

Steps

To prepare crispy zucchini in the air fryer, start by washing the zucchini. Remove both ends and dry them thoroughly. Cut the zucchini into slices about half an inch thick, then cut them into sticks about three inches long.

Take three bowls: in the first, pour the flour, in the second, the breadcrumbs, and in the last, the beaten eggs with a pinch of salt.

Roll the zucchini sticks in flour, then dip them one by one in the beaten egg and finally in the breadcrumbs, ensuring they are evenly coated.

Place the sticks in the air fryer basket and drizzle them with a thin thread of oil, or alternatively, you can spray the oil with the sprayer.

Cook at 347°F for 15 minutes until they are nicely golden and crispy. Halfway through cooking, gently turn them with a wooden spoon.
