Eggplant Medallions in Air Fryer

A burst of flavor enclosed in air fryer eggplant medallions. The slightly golden eggplant slices in the air fryer, contain a tasty filling of prosciutto and provolone, which gently melts during cooking.

Ingredients

  • 1.1 lbs eggplants (round)
  • extra virgin olive oil
  • 3 slices prosciutto
  • provolone (as needed)

Steps

To prepare the eggplant medallions in the air fryer, wash the eggplants, cut off the end and dry them carefully. Cut the eggplants into slices about 1/4 inch thick and oil both sides with extra virgin olive oil; you can use a brush or an oil sprayer.

Place the eggplant slices in layers in the fryer basket and cook at 350°F for about 12 minutes, turning halfway through. After the necessary time, remove the basket and let the eggplants cool.

To prepare the medallions, cut the provolone into slices (not too thick) the size of the eggplants. Then place a slice of prosciutto and a slice of provolone on each eggplant slice and top with another eggplant slice.

Place the medallions in the fryer basket and cook at 330°F for 5 minutes or until the provolone melts.

Storage

The air fryer eggplant medallions can be stored in the fridge for 2-3 days in a container with a hermetic seal.

If you don’t like prosciutto, you can replace it with cooked ham; in this case, lightly salt the eggplants.

Before consuming, I recommend reheating them for a few minutes.
