The eggplants in batter in air fryer are a delicious alternative to classic fried snacks, perfect as an appetizer or side dish. Cut into stick shapes, the eggplants are dipped in batter and then cooked in an air fryer until they achieve a crispy golden exterior and a soft interior.
If you are not a fan of batter, here are some recipe variations with eggplants:
- Preparation time: 10 Minutes
- Portions: 4People
- Cooking methods: Air Frying
- Cuisine: Italian
Ingredients
- 0.88 lbs eggplants
- extra virgin olive oil
- 1.6 cups all-purpose flour
- 0.63 cups sparkling water (very cold)
- salt
Tools
- Oil Sprayers
- Air Fryers
Steps
To prepare the eggplants in batter, wash the eggplants, cut off the ends, and dry them carefully. Slice the eggplants into pieces about half an inch thick and then cut them into sticks about three inches long.
Prepare the batter by pouring the sifted flour into a bowl, adding a couple of pinches of salt, and then gradually adding the cold water while stirring with a whisk to prevent lumps. You should achieve a smooth and homogeneous consistency.
Line the air fryer basket with parchment paper and spray some oil using the sprayer (alternatively, drizzle a thin line of oil). Then, take the pre-sliced eggplants, dip them one by one in the batter, remove any excess, and place them in the fryer basket, ensuring they do not overlap.
Spray some oil on the eggplants and cook at 350°F for 15 minutes, turning them halfway through. If the sticks are not sufficiently cooked and crispy after the time has elapsed, you can continue cooking for a few more minutes.
Serve the eggplants in batter hot, and if you prefer, you can salt them. Enjoy your meal!
Storage
The eggplants in batter can be stored in the fridge for one day in an airtight container. However, I recommend consuming them right after preparation.
