Fig Muffins in Air Fryer

Ingredients

  • 1.75 cups all-purpose flour
  • 0.5 cups plain yogurt
  • 0.5 cups granulated sugar
  • 2 eggs
  • 0.33 cups sunflower oil
  • 1.5 tsp baking powder
  • 6 figs
  • 1 grated lemon zest (untreated)

Steps

To prepare the fig muffins in the air fryer, first wash and dry the figs, peel them, and cut them into pieces.

In a bowl, crack the eggs, add the sugar, oil, plain yogurt, and grated lemon zest. Mix everything with a hand whisk (alternatively, you can use a hand mixer) until you get a smooth and homogeneous mixture.

Add the previously sifted baking powder and flour, and continue to mix to combine everything. Add the pieces of figs (set some aside) to the mixture and mix with a spatula.

Take the aluminum molds, butter and flour them, and then fill them with 3/4 of the batter. Alternatively, you can line the aluminum molds with paper baking cups.

Decorate the muffins with a few pieces of fig. Place the molds in the air fryer’s basket (in my case, a fryer with a 6-liter capacity was used) and cook at 329°F for 12 minutes, then lower the temperature to 311°F and cook for another 3-4 minutes.

To be sure of the cooking, do the toothpick test: insert it in the center of the muffin, and it should come out dry. If necessary, extend the cooking for another 2-3 minutes at 311°F.

Once cooked, let the fig muffins cool on a rack. Once they have cooled, you can enjoy them. If desired, you can dust them with powdered sugar.

Storage

The fig muffins in the air fryer can be stored for 3/4 days in an airtight container.
