Ingredients
- 2 cups all-purpose flour
- 1 cup almond flour
- 1 pinch salt
- 7 tbsps butter
- 1/2 cup granulated sugar
- 1 egg
- 1 vial vanilla flavoring
- 1 vial lemon flavoring

Steps for Ghost Cookies
To prepare these cute cookies, put the room temperature butter (it should be very soft) and sugar in a bowl, and beat with an electric mixer or whisk until you get a fluffy mixture.
Add the egg, vanilla flavoring, lemon flavoring (or the grated zest of a lemon), a pinch of salt, and continue mixing with the mixer. Add the flour and almond flour, then knead until you get a smooth and homogeneous dough. Wrap the dough in plastic wrap and let it rest in the refrigerator for 1 hour.
After the required time, remove the dough from the refrigerator and, with the help of a rolling pin, roll it out to a disc about 1/4 inch thick. Then, use a heart-shaped cutter (about 3.5-4 inches in diameter) to create the shapes and then cut each heart in half.
Place the half hearts on a baking sheet lined with parchment paper. To create the ghosts, proceed as follows: for each heart, take half on which you will make the eyes, making two holes with the smaller end of the piping bag nozzle (10 mm tip and 24 mm base). For the mouth, use the larger nozzle end. Leave the other half of the heart undecorated. Finally, slightly move the bottom of the two halves together to create a ghost-like appearance.
Bake the cookies in a preheated static oven at 350°F for 13-15 minutes. Once baked, let them cool on a wire rack.
Once cooled, fill the undecorated half with jam of your choice and attach the other half, the one with the ghost face. Sprinkle with powdered sugar and… voilà, cute cookies for Halloween ready!”
Storing Ghost Cookies
Unfilled cookies can be stored in a tin box for 4-5 days. If filled with jam, it is advisable to store them in the refrigerator, in an airtight container, for a couple of days.
