- 2.2 lbs mussels
- 1 bunch parsley (chopped)
- 1 clove garlic
- to taste extra virgin olive oil
- 6 oz breadcrumbs

Gratinated Mussels Steps
Start by cleaning the mussels: remove any broken or open ones, rinse them under running water and remove the beard by pulling it outwards.
In a large saucepan, add the garlic cut in half and with the core removed, a bunch of parsley, a couple of tablespoons of extra virgin olive oil, and the mussels. Cover the saucepan with a lid and cook on high heat. Once all the mussels have opened, turn off the heat and let them cool.
Meanwhile, prepare the filling for the gratinated mussels: in a bowl, combine the breadcrumbs, chopped parsley, grated lemon zest, a generous drizzle of olive oil, and some cooking liquid from the mussels. Mix well to combine the ingredients. You should get a moist filling.
Line a baking tray with parchment paper, fill the shells containing the mussels with the filling, and place them on the tray. Drizzle a thin line of olive oil over the mussels and bake in a preheated oven at 428°F for 10 minutes. Then switch to grill mode and continue cooking for another 5 minutes, or until the surface is golden brown.
