  • 4 slices chicken breast
  • 4 slices cooked ham
  • 4 slices provolone
  • to taste extra virgin olive oil
  • to taste flour
  • to taste breadcrumbs
  • 2 eggs

To prepare the cordon bleu, place the chicken breast slices — have them cut by the butcher so they are not too thin — on a work surface or chopping board.

Arrange some strips of provolone cut into rectangles, slightly narrower than the chicken breast, on the cooked ham slices, then roll the ham around the cheese.

Place each ham and provolone roll in the center of the chicken slices and fold them over like a wallet, pressing the edges well to seal them.

Prepare three bowls: one with breadcrumbs, one with flour, and one with beaten and lightly salted eggs. Dip each cordon bleu first in the flour, then in the egg, and finally in the breadcrumbs, ensuring the breading is even.

Place the cordon bleu in the air fryer basket and drizzle with a thin stream of oil or alternatively, you can spray the oil with the special sprayer.

Cook at 356°F for 15 minutes until the cordon bleu is golden brown and crispy. Halfway through cooking, gently turn and spray a little more oil.
