Ingredients

  • 4 cups all-purpose flour (w 260)
  • 6 tbsp butter
  • 1/3 cup milk
  • 1/2 tsp salt
  • 8 g fresh yeast
  • 3 eggs
  • 2 tbsp unsweetened cocoa powder
  • 1/3 cup granulated sugar
  • 1 packet vanillin
  • A few drops orange essence

Kinder Croissants Steps

First, in the bowl of the stand mixer, pour in the flour, sugar, vanillin, and the yeast crumbled by hand. Mix the dry ingredients.

Next, add the softened butter, milk, eggs (all at room temperature), a few drops of orange essence, and finally the salt. Knead until you get a smooth and elastic dough.

Then divide the dough into two equal parts: add the unsweetened cocoa and a tablespoon of milk to one half, then knead again until the ingredients are well incorporated.

Place the two doughs in separate bowls, cover with plastic wrap, and let rise until doubled in volume.

After the rising time, roll both doughs into two rectangles of the same size. Brush the cocoa dough with a little water, then overlap the white dough. Lightly roll to make the two layers adhere well, keeping the rectangular shape. The final thickness should be about 1/5 inch.

Using a pizza cutter, cut out 8 triangles. Slightly stretch each triangle and roll it up on itself, forming the classic croissant shape.

Place the croissants on a baking sheet lined with parchment paper, leaving a bit of space between each. Cover with plastic wrap and let rise until doubled, about 3-4 hours.

Bake in a preheated static oven at 350°F for about 15 minutes. Once baked, let them cool and fill with chocolate spread.

Storage and Tips

Kinder croissants can be stored for about 2 days in an airtight container at room temperature.

You can fill them according to your taste: with hazelnut cream, pistachio cream, custard, or any other delicious filling you prefer.
