Panettone-flavored Muffins

Ingredients

  • 2 eggs
  • 1 3/4 cups all-purpose flour
  • 1/4 cup sunflower oil
  • 1/2 cup milk
  • 1/2 cup raisins
  • 1/3 cup granulated sugar
  • 1 tbsp honey
  • 1 lemon (grated zest)
  • 1 orange (grated zest)
  • Half vial vanilla flavoring
  • 2 tsp baking powder

Steps for Panettone-flavored Muffins

To prepare these delicious muffins, first soak the raisins in warm water for 20-30 minutes. After soaking, squeeze them, dry them, and set aside.

Crack the eggs in a bowl, add the sugar, oil, milk, grated lemon and orange zest, half a vial of vanilla flavoring, and honey. Mix everything with a whisk (you can also use an electric beater) until you get a smooth and homogeneous mixture.

Then add the sifted baking powder and flour, and continue mixing to combine well. Finally, add the raisins and mix to distribute them evenly.

Take the 12-muffin pan, place the paper liners, and fill them with 3/4 of the batter. Alternatively, if you don’t have the pan, you can use aluminum liners.

Bake in a static oven at 356°F (180°C) for about 20 minutes, or in a fan oven at 338°F (170°C) for the same time. To ensure they are cooked, do the toothpick test: insert it in the center of a muffin, and it should come out dry. If necessary, extend the baking by another 2-3 minutes.

Remove the panettone-flavored muffins from the oven and let them cool on a wire rack. If you like, you can dust them with powdered sugar.

Storage for Panettone-flavored Muffins

The muffins can be stored at room temperature in an airtight container for 3-4 days. If you want to make the panettone-flavored muffins even more delicious, you can add some candied fruit cut into cubes to the batter.
