Ingredients
- 2 eggs
- 1 3/4 cups all-purpose flour
- 1/4 cup sunflower oil
- 1/2 cup milk
- 1/2 cup raisins
- 1/3 cup granulated sugar
- 1 tbsp honey
- 1 lemon (zest)
- 1 orange (zest)
- Half vial vanilla flavoring
- 1 tbsp baking powder

Steps for Panettone-Flavored Muffins in the Air Fryer
To start preparing these delicious muffins, soak the raisins in warm water for about 20-30 minutes. Once the time is up, drain them, gently squeeze, dry, and set aside.
In a bowl, crack the eggs and add the sugar, oil, milk, the grated zest of the lemon and orange, half a vial of vanilla flavoring, and the honey. Mix the ingredients with a hand whisk, or an electric mixer, until obtaining a smooth and homogeneous mixture.
Then, add the flour and the baking powder, both previously sifted, and mix until fully incorporated. Finally, add the raisins and mix so they are well distributed in the batter.
Take the aluminum molds, grease and flour them, and then fill them with 3/4 of the batter. Alternatively, you can line the aluminum molds with paper baking cups.
Place the molds in the air fryer basket (in my case, an air fryer with a 6-liter capacity was used) and cook at 320°F for 10 minutes, then lower the temperature to 300°F and cook for another 3-4 minutes.
To ensure they are cooked, perform the toothpick test by inserting it in the center of the muffin; it should come out dry. If necessary, extend the cooking for another 2-3 minutes at 300°F.
Remove the panettone-flavored muffins from the air fryer and let them cool on a wire rack. If you like, you can sprinkle them with powdered sugar.

The muffins can be stored at room temperature in an airtight container for 3-4 days. If you want to make the panettone-flavored muffins in the air fryer even more delicious, you can add diced candied fruit to the batter.
