Peach Muffins

The air fryer peach muffins are perfect for celebrating the flavors of summer. They are soft and fragrant, extremely simple to prepare, these treats win over at the first bite thanks to the natural sweetness of fresh peaches, which blend harmoniously with a soft and delicate dough.

Ingredients

  • 3 eggs
  • 1/2 cup granulated sugar
  • 1/3 cup sunflower oil
  • 1/2 cup plain natural yogurt
  • 1 lemon flavor vial
  • 2 1/4 cups all-purpose flour
  • 2 tsp baking powder
  • 2 nectarines

Steps

To prepare the peach muffins, crack the eggs (they should be at room temperature) into a bowl, add the sugar, and start whipping at maximum speed with the electric mixer. When the mixture is light and fluffy, gradually add the oil. Then, while continuing to mix, incorporate the yogurt and the lemon flavoring.

Sift the flour with the baking powder and gradually add it to the mixture while continuing to mix.

Wash the peaches, peel them, cut one part into small pieces and the other part into slices. Add the chopped peaches to the batter, stirring with a spatula or spoon. Take the 12 muffin tray, place the paper liners, and fill them with 3/4 of the batter. Alternatively, if you don’t have the tray, you can use aluminum liners.

Decorate the muffins by placing some of the previously sliced peaches on top. Bake in a static oven at 356°F for about 20/25 minutes, or in a fan oven at 338°F for the same time.

To ensure they are cooked, do the toothpick test: insert it into the center of the muffin and when pulled out, it should be dry. If necessary, extend the cooking for another 2-3 minutes.

Once baked, let the peach muffins cool on a rack. When they’ve cooled down, you can enjoy them. If desired, you can dust them with powdered sugar.

Storage

The peach muffins can be stored for 3/4 days in an airtight container.
