Potato Frittata in Air Fryer

Ingredients

  • 3 potatoes (medium)
  • 4 eggs
  • 1/3 cup grated Parmesan
  • salt
  • extra virgin olive oil

Steps

To prepare the potato frittata in an air fryer, wash the potatoes, peel them, and dry them carefully. Dice the potatoes, place them in a bowl, season with extra virgin olive oil and salt.

Pour the potatoes into the air fryer basket and cook at 350°F for about 20 minutes. The time may vary based on the size of the potato cubes. Once ready, let them cool.

Meanwhile, in a bowl, crack the eggs, add a pinch of salt, the grated Parmesan, and beat with a fork.

Place a suitable-sized pan inside the air fryer basket and line it with parchment paper. Arrange the potatoes evenly in the pan and carefully pour the beaten eggs.

Cook the potato frittata at 340°F for 10/15 minutes. To ensure it’s cooked, do the toothpick test and if necessary, extend the cooking time for a few more minutes.

Once cooking is complete, let it cool for a few minutes and serve the potato frittata.

Storage

The potato frittata in the air fryer can be stored in the fridge for 1/2 days in an airtight container.

You can enjoy the potato frittata cold as well, and it’s ideal for a packed lunch.
