- 1 lb 2 oz potatoes
- 4 artichokes
- 3 1/2 tbsps extra virgin olive oil
- 1 lemon
- 1/4 cup breadcrumbs
- 1 handful parsley

Steps
To begin preparing the baked potatoes and artichokes, peel the potatoes, wash them thoroughly, and cut them in half, then each half into four wedges. Transfer them to a pot with cold water and bring to a boil.
Meanwhile, clean the artichokes: remove the tougher outer leaves and trim the ends. Scrape the stem to make it more tender. Cut the artichokes in half, remove the central part known as the choke, and cut them into wedges.
When the water begins to boil, immerse the artichokes and add a few drops of lemon juice to prevent them from turning brown. Boil the artichokes and potatoes together for about 5 minutes, then drain them. Finely chop the parsley after washing it.
