Quick Apple and Coconut Pancakes

Ingredients

  • 1 Golden apple
  • 0.7 oz grated coconut (shredded)
  • 0.8 cup flour
  • 0.5 cup milk
  • 0.4 cup Greek yogurt
  • 1 egg
  • 1 teaspoon baking powder
  • as needed extra virgin olive oil (or butter)

Steps

To prepare the apple and coconut pancakes, first pour the milk and egg into a bowl and whisk with a hand whisk. Add the Greek yogurt and continue to mix.

Sift the flour and baking powder and add to the egg and milk mixture, and mix well; there should be no lumps.

Wash the apple, peel it, and remove the core, grate it into strips with a grater directly into the batter bowl. Add the coconut and mix everything.

Heat a non-stick pan, add a little oil or butter, and distribute it evenly on the bottom of the pan using kitchen paper. Pour a ladle of batter in the center. Let cook over moderate heat for a few minutes. When the first bubbles appear, flip the pancake with a spatula and cook for a few more minutes. Continue in this manner until all the batter is used.

When the pancakes are ready, stack them and serve them garnished with apple pieces or powdered sugar.

Storage

The apple and coconut pancakes can be stored in the refrigerator for a couple of days in an airtight container.

You can garnish the pancakes as you like with maple syrup, fresh fruit, or honey.
