  • 2.2 lbs fresh spinach
  • 6 eggs
  • 1 mozzarella
  • 0.88 oz grated Parmesan cheese
  • to taste salt

Steps for Rustic Spinach Pie

Start preparing the rustic pie by working on the filling: thoroughly rinse the spinach under running water, then transfer them to a saucepan and let them cook on low heat for about 10 minutes. Once ready, let them cool and then squeeze them to remove excess water.

In a bowl, break the eggs, add a pinch of salt and the grated Parmesan cheese, then mix with a fork or whisk until you get a homogeneous mixture.

Line a 10.2-inch springform pan with puff pastry. If using a store-bought roll, leave the provided baking paper; if you’ve made the pastry at home, place it on a sheet of baking paper and transfer it to the pan. Prick the base with a fork.

Pour the spinach into the pan and spread them evenly over the base. Cut the mozzarella into slices and place them on top of the spinach. Finally, gently pour the egg and Parmesan mixture.

Cover the filling with the other puff pastry roll and seal the edges by folding the puff pastry. Prick the surface with a fork. If desired, you can brush it with egg yolk for a more intense golden color.

Bake in a preheated static oven at 356°F for about 30-40 minutes, or until the surface is golden to your taste

The rustic spinach pie is ready to be served! The surface will be crispy and golden. Let it cool for a few minutes before removing it from the pan.
