Ingredients

  • 1 eggplant
  • 2 zucchini
  • 2 potatoes
  • to taste salt

  • 1 oz breadcrumbs

Steps

To prepare the sandy vegetables in the air fryer, start by cleaning the vegetables. Wash the zucchini, dry with paper towels, remove the ends, divide into four parts, and cut into chunks.

Wash the eggplants, dry with a cloth, remove the stalk with the help of a knife, divide into four parts, and cut into chunks.

Finally, take care of the potatoes, wash them, remove the skin with a peeler, divide them into four parts, and cut into cubes.

In a bowl, pour the vegetables, salt them to your taste, and add 3 to 4 tablespoons of extra virgin olive oil and mix well. Add the breadcrumbs and continue to mix to distribute evenly.

Place the vegetables in the air fryer basket, cook at 356°F for 20 to 25 minutes (the time depends on the size of the chunks) remembering to turn them halfway through cooking. Try not to move them too much to prevent the breadcrumbs from coming off the vegetables.

Storage
