- 2 cups milk
- 4 cups all-purpose flour (W 260)
- 0.3 oz fresh yeast
- 2.5 tbsp butter
- 1 egg
- 1 pinch salt
- 3 tbsp granulated sugar
- 1 cup raisins
- to taste powdered sugar
- to taste sunflower oil

First of all, soak the raisins the night before to rehydrate them.
In a bowl, pour the flour, the lukewarm milk in which you have dissolved the fresh yeast, the sugar, the beaten egg, and the room temperature butter. Start mixing with the help of a wooden spoon. Then add the sultanas (well-drained and dried with paper towels) and a pinch of salt, then continue kneading. The dough, being highly hydrated, will be quite sticky.
Cover the bowl with plastic wrap and let it rise until it doubles in volume. When the dough has doubled, heat plenty of oil in a pot until it reaches a temperature of approximately 350°F.
Once the temperature is reached, with the help of an ice cream scoop (or alternatively two spoons), form balls and plunge them into the hot oil.
Cook them until they have acquired a very golden color, turning them often. Drain them with a slotted spoon and place them on a baking dish lined with paper towels, to remove excess oil.
Continue this way until the dough is finished. Once the oliebollen are ready, dust them with powdered sugar.
