- 1 sprig thyme
- 2 sprigs rosemary
- 3 leaves sage
- 1 clove garlic

Steps
To prepare the tasty baked potatoes, as a first step, place a pot with plenty of salted water on the stove and bring it to a boil: it will be used to blanch the potatoes.
Meanwhile, wash the potatoes carefully to remove any soil residues, then peel them. If you prefer, you can leave the skin on after washing them thoroughly. Cut them in half and then into wedges not too small, placing them in a bowl of cold water to prevent oxidation.
When the water boils, add the potatoes and cover the pot with a lid. After about 5 minutes, once the water has returned to a boil, turn off the heat and drain the potatoes.
Prepare the dressing: in a bowl, pour 4-5 tablespoons of extra virgin olive oil, add two halved garlic cloves, a couple of pinches of salt, the thyme leaves, and finely chopped rosemary and sage.
Add the blanched potatoes to the dressing and mix well to distribute it evenly.
Line a baking tray with parchment paper and arrange the potatoes well spaced from each other. Bake in a preheated static oven at 356°F for about 35-40 minutes. After 15 minutes, gently stir the potatoes. In the last 5 minutes, increase the oven temperature to 392°F to achieve perfect browning.
Once cooked, take out your tasty baked potatoes from the oven and serve them.
