- 0.88 oz grated parmesan
- 1 egg

To prepare the turnip greens meatballs in the air fryer, start by cleaning the turnip greens, remove the damaged leaves and the harder part of the stem. Wash everything thoroughly under plenty of running water.
In a pan, combine a couple of tablespoons of oil, the garlic clove, and let it brown for a few minutes over low heat. Remove the garlic from the pan, add the turnip greens, water, and salt to taste. Cook for 8-10 minutes until the stems of the turnip greens are tender.
Once the turnip greens are cooked, place them in the bowl of an immersion blender and blend until a puree is obtained. Pour the puree into a bowl, add the grated parmesan, 4-5 tablespoons of breadcrumbs, the egg, and mix everything with a spatula until a homogeneous mixture is obtained. If the mixture is too soft, add more breadcrumbs.
Take a little of the mixture and form meatballs, placing a cube of provolone in the center and sealing them well. In a bowl, place some breadcrumbs and roll the meatballs in it to coat them.
