Colorful, fragrant, and incredibly versatile, this vegetable roll is the perfect answer for those seeking a healthy yet flavorful dish. The potatoes provide a soft and enveloping base, while carrots and zucchini add sweetness and freshness. It’s ideal as a main course but can also become a tasty appetizer or a light lunch to take with you.

Ingredients

  • 2 potatoes (medium)
  • 1 zucchini
  • 2 carrots
  • 3 eggs
  • to taste salt
  • 1/3 cup grated Parmesan cheese
  • 3.5 oz cooked ham
  • 3.5 oz provola cheese (sliced)

  • 1 Grater

Steps

To prepare the vegetable roll, start by cleaning the vegetables. Wash the zucchini, pat dry with paper towels, remove the ends, and grate using a wide-holed grater.

Wash the carrots, peel and dry them, remove the ends, and grate them. Finally, take care of the potatoes, wash them, remove the peel using a potato peeler, and grate them.

In a bowl, pour the grated vegetables, add the beaten eggs, grated Parmesan cheese, a couple of pinches of salt, and mix everything with the help of a spatula.

Transfer the mixture onto a baking tray lined with parchment paper (I used a 10 x 12-inch tray), compact it, and distribute it evenly. Bake in a static oven at 356°F and cook for about 25 minutes.

When the roll is cooked, place another sheet of parchment paper on top of it, flip it over, and remove the parchment paper from the upper side. Let cool for a few minutes, then proceed with the filling: lay the slices of cooked ham and provola on the roll and roll it on itself. Bake for 10 minutes at 356°F, just enough time for the provola to melt.

Your vegetable roll is ready to be sliced and served at the table.

Storage

The vegetable roll can be stored in the fridge for up to 2 days in an airtight container. Before consuming, I recommend reheating it for a few minutes.

You can replace cooked ham with speck or prosciutto. If you don’t like provola, you can use slices of galbanone instead.
