Ingredients

  • 1 eggplant
  • 1 red bell pepper
  • 2 zucchini
  • 1 potato (medium)
  • 1 sprig rosemary
  • salt
  • extra virgin olive oil

Steps

To prepare vegetables in an air fryer, start by cleaning the vegetables. Wash the bell peppers under running water, dry them with paper towels, remove the cap, cut the peppers into four parts, and remove the white filaments and seeds. Cut the peppers into squares.

Wash the zucchini, dry with paper towels, remove the ends, cut into four parts, and chop.

Wash the eggplants, dry with a cloth, remove the stem with the help of a knife, cut into four parts, and chop.

Wash the potatoes, peel them with a potato peeler, cut into four parts, and dice.

In a bowl, add the potatoes and bell peppers, salt them to taste, and add a couple of tablespoons of extra virgin olive oil, half a minced rosemary sprig, and mix well. Place the potatoes and bell peppers in the air fryer basket, cook at 356°F for 5 minutes, remembering to stir them occasionally.

Meanwhile, season the remaining vegetables, then add a couple of tablespoons of oil, salt, and the other half of the rosemary, mix well.

After 5 minutes, add the eggplants and zucchini to the air fryer basket and continue cooking for another 15 minutes, shaking the basket occasionally.

Your side dish is ready to be served at the table.

Storage

Air fryer vegetables can be stored in the fridge for a couple of days in a container with an airtight seal. When you need to consume them, heat them for a few minutes.
