Zucchini Frittata in Air Fryer

The zucchini frittata in air fryer is light and irresistibly tasty, this frittata is the perfect union between simplicity and flavor. Grated zucchini are combined with eggs and cheese to create a soft and golden dish, cooked without excess oil thanks to the air fryer. Ingredients

  • 2 medium zucchinis
  • 6 eggs
  • 1/3 cup grated Parmesan cheese
  • extra virgin olive oil
  • salt

  • 1 Air fryer
  • 1 Grater
  • 1 Spatula
  • 1 Baking pan

Steps

To prepare the zucchini frittata in air fryer, wash the zucchinis carefully, cut off the ends, dry them with care and grate them with a large-hole grater.

In a bowl, break the eggs, add a pinch of salt and beat with a fork. Then add the previously grated zucchinis, the grated Parmesan cheese and mix well.

Place a baking pan suitable for your air fryer size inside the air fryer basket, line it with parchment paper, give a couple of sprays of extra virgin olive oil using the sprayer, pour in the zucchini and egg mixture, and level it with a spatula or the back of a spoon.

Cook the zucchini frittata at 350°F for 15 minutes. To ensure it’s cooked, do the toothpick test and if necessary, extend the cooking for a few more minutes.

Once cooked, let it cool for a few minutes and serve the zucchini frittata.

Storage

The zucchini frittata in the air fryer can be stored in the fridge for 1/2 days in an airtight container.

You can also enjoy the zucchini frittata cold, and it is ideal for a packed lunch.
