Zucchini in Batter in Air Fryer

Zucchini in batter in an air fryer are a delicious alternative to classic fried snacks, perfect as both an appetizer and a side dish. Cut into stick shapes, the zucchini are dipped in batter and then cooked in an air fryer until they achieve a crispy golden exterior and a soft interior.

If you’re not a fan of batter, you can try the version with breadcrumbs, zucchini sticks.

Ingredients

  • 14 oz zucchini
  • extra virgin olive oil
  • 1.5 cups all-purpose flour
  • 2/3 cup sparkling water (very cold)
  • salt

Steps

To prepare the zucchini in batter in an air fryer, wash the zucchini, cut off the two ends, and dry them carefully. Cut the zucchini into slices about half an inch thick and then divide them into sticks about three inches long.

Prepare the batter, pour the previously sifted flour into a bowl, add a couple of pinches of salt, and then slowly add the cold water, mixing with a whisk to prevent lumps. You need to achieve a smooth and homogeneous consistency.

Line the air fryer basket with parchment paper and spray a little oil with the sprayer (alternatively, distribute a thin thread of oil). Then, take the zucchini sticks prepared earlier, dip them one at a time in the batter, removing the excess, and place them in the air fryer basket, avoiding overlapping.

Spray a little oil on the battered zucchini and cook them at 350°F for 15 minutes, turning them halfway through. After the necessary time, if the sticks are not sufficiently cooked and crispy, you can continue cooking for a few more minutes.

Serve the battered zucchini hot, enjoy your meal!

Storage

Battered zucchini can be stored in the fridge for one day in an airtight container. My advice is to consume them at the time you prepare them.
