Ingredients

  • 1.1 lbs zucchini
  • 3.5 oz provolone cheese (in slices)
  • salt
  • extra virgin olive oil
  • 2 slices cooked ham

Steps

To prepare the zucchini roll in the air fryer, wash the zucchini, cut off both ends, and dry thoroughly. Slice the zucchini into slices about 3/16 inch thick using a mandoline slicer and brush both sides with extra virgin olive oil. You can use a brush or an oil sprayer.

Layer the zucchini slices in the air fryer basket and cook at 340°F for about 10-12 minutes, turning halfway through cooking. Once done, slightly salt the zucchini and let them cool.

To create the roll, place the zucchini slices on a sheet of parchment paper (or plastic wrap), slightly overlapping them to form two rows. Lay the slices of cooked ham and the provolone cheese sliced not too thick on top. Roll everything up, using the parchment paper to help.

Line the air fryer basket with parchment paper and place the zucchini roll with the seam side down. Cook at 340°F for 5-6 minutes or until the provolone cheese melts.

Storage

The zucchini roll in the air fryer can be stored in the fridge for 2-3 days in an airtight container.

If you do not like cooked ham, you can replace it with prosciutto, in which case avoid salting the zucchini as the prosciutto is already salted.
