Baskets with Russian Salad, Salmon, and Shrimps

Baskets with Russian Salad, Salmon, and Shrimps are a really tasty appetizer that I prepare not only for New Year’s Eve. I can assure you that in summer, eaten cold from the refrigerator, they are truly delicious. As for the Russian salad, I usually prepare it by hand: a task that requires a bit more time but is quite easy. However, if you don’t have the time, you can buy it packaged, but make sure it’s of good quality. Also, regarding the shrimps, if you don’t feel like preparing them, you can find them ready in brine in stores. If you don’t like both shrimps and salmon, you can garnish the baskets with seafood salad or marinated anchovies… feel free to add whatever you like because it will still be delicious.

  • 1 package rectangular puff pastry
  • 7 oz shrimps in brine
  • 3.5 oz smoked salmon
  • 12 tablespoons Russian salad
  • to taste thyme leaves

How to Prepare Baskets with Russian Salad, Salmon, and Shrimps

To prepare the Baskets with Russian Salad, Salmon, and Shrimps, organize your workspace with all the ingredients already measured.

This way, you’ll have everything at hand, and your work will be easier and faster.

The rectangular puff pastry is ideal in this case because it can be divided more easily, but if you can’t find it, try to adapt the round one.

Divide it, cutting it with a knife or a pizza cutter into 12 squares.

Place them inside the baking cups and prick the base with a fork.

Place a piece of parchment paper and the ceramic spheres inside the prepared baskets to prevent the pastry from puffing up during baking.

I always use the parchment paper that wraps the puff pastry, so as not to waste it.

Bake them in a preheated oven at 350°F/390°F, and let them cook for about 15 minutes, or until they are golden.

Turn off the oven and let them cool outside the oven.

Remove both the spheres and the paper, and place them on a serving tray.

Fill them with a tablespoon of Russian salad, and alternate the flavors by placing shrimps on some and smoked salmon on others.

Serve your Baskets with Russian Salad, Salmon, and Shrimps cold, sprinkled with fresh thyme leaves, and optionally with a squeeze of lemon.

Tips, Variations, and Storage

The dressing for the baskets keeps perfectly in the refrigerator for a few days, especially if you buy everything packaged.

As for the pastry, you can prepare it a few hours in advance because the baskets should be served cold.

If you make the Russian salad by hand, do it at least two days in advance.
