It’s important not to exceed the indicated cooking time and to keep the flame always high, as lowering it risks toughening them. The marinade I suggest can always be replaced with something you prefer if it doesn’t suit your taste. I love this dish because it’s simple and quick, which is why I always have some in the freezer, ready to defrost in the microwave when needed. Otherwise, I let them defrost in the fridge for about 24 hours. For those who want to make them even more succulent, I recommend placing a thick slice of lard between each piece. However, the cooking time remains the same.

Ingredients
- 1.54 lbs Single cut adult beef
- 6 leaves sage
- 2 sprigs rosemary
- 2 sprigs thyme
- 2 sprigs oregano
- 2 cloves garlic
- 1 lemon zest
- 4 tbsps extra virgin olive oil

Preparation
Take the meat out of the refrigerator at least 40 minutes before cooking, so it reaches room temperature. Pat it dry with paper towels and cut it into strips about 0.8 inches thick. Cut each strip into chunks, about 0.8 inches each.
Place the resulting stew in a large bowl and season with aromatic herbs and the two cloves of garlic finely chopped with a sharp knife or a cutter. Add the extra virgin olive oil as well.
Season with salt and pepper to taste, and finally add the grated zest of one lemon. Mix well to combine all the ingredients.
Cover with plastic wrap and let it marinate for about twenty minutes. After this time, prepare the skewers: you should get about 12.
Heat a grill pan or a flatbread pan and cook them. Keep the flame always high, turning them until you get a crust: it will take about 10 minutes. Try not to exceed the cooking times and do not lower the flame to avoid toughening them.

Tips and Storage
We can store the skewers in the fridge, either cooked or raw, but inside a glass or ceramic airtight container.
They can also be frozen in both cases, but remember to defrost them in the fridge, to avoid food poisoning.
