How to Prepare Beef Strips with Aromatic Herbs
First, take the beef strips out of the refrigerator at least forty minutes before cooking, so they are at room temperature before cooking. This will avoid thermal shock and the consequent toughening of the meat, which would lose all its juices.
Meanwhile, chop the garlic into pieces and mince the sage and rosemary, remembering to leave one sprig of each whole.
In a high-sided non-stick pan, place the unchopped aromatic herbs, garlic, and three tablespoons of extra virgin olive oil.
When the oil is very hot, brown everything for a minute and then add the beef strips, a few at a time, to not lower the internal temperature too much, keeping the heat high.
Once they’ve all been added, sprinkle them with the minced herbs, mix and turn them to incorporate well.
