How to prepare Beef Strips with Aromatic Herbs

First, take the beef strips out of the refrigerator at least forty minutes before, so they are at room temperature before cooking. This way, you will avoid thermal shock and the consequent hardening of the meat, which will lose all its juices.

In the meantime, prepare the garlic into pieces and chop the sage and rosemary, but remember to leave one sprig of each whole.

In a high-edged non-stick pan, put the whole aromatic herbs, the garlic, and three tablespoons of extra virgin olive oil.

When the oil is very hot, sauté everything for a minute and then add the strips, but a few at a time to not lower the internal temperature too much, and keep the flame always high.
