The Beef Strips with Asparagus and Parmesan are simply delicious. A typically spring second course, prepared with only three ingredients: meat, asparagus, and parmesan. Not only are they quick to make, but also very easy, making them suitable even for those less experienced in the kitchen. Just follow my instructions, especially those regarding the preparation of the meat, which should be taken out of the fridge in advance so that it is at room temperature when you cook it. This way, it won’t undergo thermal shock and will certainly be very tender. Another important tip is to never lower the flame, so the meat doesn’t release its juices and doesn’t boil. It takes only a few minutes to cook the strips. If, like me, you love zero-waste recipes, don’t throw away the asparagus scraps, but try making some delicious Blinis

- 28 oz beef strips
- 28 oz asparagus
- 2 cloves garlic
- 4 tbsps extra virgin olive oil
- 1 cup grated parmesan
- to taste salt

How to prepare Beef Strips with Asparagus and Parmesan
To prepare the Beef Strips with Asparagus and Parmesan, always organize your workspace with all the necessary tools and pre-measured ingredients.
This way, you have everything at hand, and your work will be simpler and faster.
Take the strips out of the fridge at least an hour before cooking, so they reach room temperature.
Wash the asparagus under running water, trying to remove all soil residues by hand.
Dry them, remove the tough part of the asparagus, and use a peeler to strip the final part.
Cut them into diagonal slices and place them in a non-stick pan along with the garlic cut into pieces.
Add the extra virgin olive oil, salt, and cook them on high heat for a few minutes because they should remain crispy and brightly colored.
Once ready, still keeping a high flame, add the beef strips and move them continuously with a spatula.
Sauté them in the pan for a few minutes, season lightly with salt, and finally incorporate the grated parmesan.
When it has completely melted, turn off the heat.
Serve your Beef Strips with Asparagus and Parmesan immediately, and if you like, sprinkle with more grated parmesan.
Tips, Variations, and Storage
The asparagus beef strips can be kept for at least two days in the refrigerator.
I recommend reheating them in the microwave to prevent them from drying out.
If you don’t like beef, you can easily use whatever meat you prefer, as the result will still be excellent.
