Beer-battered Cod Fillets

The Beer-battered Cod Fillets are crispy and delicious. I usually buy salted cod, desalt it myself, and portion it before freezing, as this saves me a bit on the price. But this time, with unexpected guests, I bought the pre-desalted and portioned fillets…I saved a lot of time, but they cost me much more. These cod fillets are really ideal to prepare for Christmas Eve.

Ingredients

  • 4/5 cups all-purpose flour
  • 2/3 cups light beer
  • 1 lemon zest
  • 14 oz desalted cod fillets
  • 1 quart peanut oil

How to Prepare Beer-battered Cod Fillets

  • To prepare the Beer-battered Cod Fillets, organize your workspace with all the ingredients, pre-measured, so everything is at hand.

    Chill the beer in the freezer for at least twenty minutes if you don’t usually keep it in the fridge, as it needs to be very cold for use.

    Heat 1 quart of peanut oil in a pan with high sides, so it doesn’t spill out when cooking the fish, and wait until it reaches about 340°F.

    If you don’t have a food thermometer, don’t worry, as you can use a toothpick to know when it’s the right time.

    Insert the stick into the hot oil, and if bubbles start to form around it, it means the temperature is just right.

    Meanwhile, mix the flour in a bowl with grated lemon zest and the beer.

    Using a fork, blend all ingredients well to obtain a batter that is not too runny but perfect for sticking to the fillets.

    Dip the fillets in the batter, then immerse them directly in the hot oil, turning them constantly for about 2 minutes, so they don’t burn, and when golden brown, drain them on a tray lined with paper towels.

    Serve your Beer-battered Cod Fillets piping hot and sprinkled with more grated lemon zest.

Tips and Variations:

The Beer-battered Cod Fillets should certainly be made at the last moment because if reheated, they will lose all their crispiness.

If you don’t like beer, you can make your batter crispy by using sparkling water, but it must be very cold.
