Beet and Orange Salad, a truly delicious combination for a very simple recipe that can be made at the last minute, especially if you have already bought cooked beets. I prefer them raw because I never know how I will prepare them, plus using the pressure cooker, they cook in just a few minutes. To flavor this salad, I didn’t use the usual balsamic vinegar, but I preferred the Balsamic Vinegar Syrup that I make with my own hands. Even in this case, it takes very little time and can be stored for a long time in an airtight glass container. So I get to work and make a batch in one go, which lasts me all year. It is a condiment that goes perfectly with any dish.

Ingredients
- 2 pre-cooked beets
- 2 Tarocco oranges
- to taste extra virgin olive oil
- to taste salt and pepper
- to taste Parmesan shavings
- to taste balsamic vinegar syrup

Preparation
If we don’t have time to boil the beets, we buy the pre-cooked ones (I bought them fresh and cooked them in a pressure cooker for 20 minutes because they were large). Wear a pair of gloves to avoid staining our hands and after peeling them with a sharp knife, slice them thinly,
Arrange them on the plate with which we will serve them and season them with salt and pepper.
Peel the oranges, removing the white part as well, so they are more palatable, and slice them into thin rings.
At this point, arrange the orange slices on the beets and sprinkle everything with Parmesan shavings, prepared previously with the appropriate tool. Now we can finish dressing them, adding extra virgin olive oil to our taste and the Balsamic Vinegar Syrup.
Serve our Beet and Orange Salad, at room temperature or cold on warmer days, in both cases it will surely be delicious.
Tips
The salad keeps in the fridge for at least a day, but it will certainly not look like it just made and even the texture.
If you have guests and want to prepare in advance, the only thing you can do is clean, slice, and beetroot.
The orange can also be sliced before, but it will lose some of its juice.
