- 1 medium-large Abate pear
- 2.1 oz Pecorino Romano
- 1.8 oz chopped hazelnuts
- 2 tsps brown sugar

How to Prepare Cabbage Salad with Caramelized Pears
After washing and drying the pear, cut it in half, remove the core and stem but leave the skin on (in this case, I recommend pears from organic farming). Cut it into slices no thicker than half an inch, as they need to be thin.
Put just a drizzle of oil in a non-stick skillet, add the pear slices, and salt them.
Sauté them in the skillet, keeping the heat medium-high, and as soon as they soften, sprinkle with brown sugar. Continue cooking for just one or two minutes, enough time to caramelize them. Turn off the heat and let them cool.
Meanwhile, slice the cabbage into strips, wash it, and dry it thoroughly with a cloth. Avoid leaving it damp, as it would spoil the final result of the recipe.
Place the cabbage on the serving plate, season it with a drizzle of extra virgin olive oil, salt, and mix. Crush the hazelnuts coarsely with the bottom of a glass.
