Caramelized Pineapple with Rum

Caramelized Pineapple with Rum is a very simple yet delicious dessert that usually appeals to both adults and children. Don’t worry about the latter, because the alcohol evaporates during cooking. For this recipe, I recommend choosing a ripe yet firm fruit to the touch. When ripe, it has a bright skin, tending towards yellow-green. I’ve also noticed that if you try to remove leaves from the crown, they come off easily only if the pineapple is ripe. This is an ideal recipe year-round, to be served hot in winter or straight from the fridge in summer, perhaps accompanied by good vanilla ice cream.

Ingredients

  • 3 cups pineapple
  • 3 tbsp sugar
  • 3 tbsp rum
  • 1 sprig Fresh mint

Preparation

Remove the pineapple crown and the rear part. Then move to the center part and once the skin is completely removed, take out the tough cavities that contain small tufts, using a sharp knife.

Cut the pineapple in half, and without discarding the central part, slice it into pieces with a thickness that can vary from 1.5 to 2 centimeters (about 0.6 to 0.8 inches). Place a non-stick pan on medium-high heat, test with the palm of your hand when it reaches the right temperature, and only then start grilling the slices.

Turn them over two or more times until they are golden and drizzle them with rum. After letting it evaporate for a few seconds, add the sugar and caramelize for a few minutes, but do not let the sauce reduce too much. Finally, add a sprig of fresh mint.

Arrange the slices on a serving plate and drizzle them with the cooking sauce.

Serve immediately the Caramelized Pineapple with Rum, but not before decorating it with a sprig of fresh mint.

Tips

The caramelized pineapple can be kept in the refrigerator for a few days, but it should be stored in an airtight container.

I recommend reheating it in the microwave, although it’s also delicious cold from the fridge, especially in summer.
