Chilled Watermelon Pulp

Ingredients

  • 3 1/2 cups cleaned watermelon
  • 2 1/2 tbsp cornstarch
  • 2 1/2 tbsp powdered sugar

  • 1 Hand whisk
  • 1 Spatula

Preparation

Separate the pulp from the fruit, remove the white part and seeds, and take the amount you need.

Cut it into pieces and blend until it becomes a smooth and homogeneous puree. At this point, pour the pulp into a small pot.

Gradually add the cornstarch, which will act as a thickener, the powdered sugar, and with the help of a hand whisk, dissolve well so that no lumps remain, which are unpleasant during tasting.

If desired, you can also sift them before adding to the watermelon smoothie: even a simple strainer will suffice for this operation.

Place the pot on the stove over medium-high heat and stir continuously with the hand whisk, so it doesn’t stick. Cook for about ten minutes or until the pulp has thickened.

Turn off the heat and pour the mixture directly into the silicone molds, as it will be easier to remove them once they have cooled. Level with a spatula if necessary.

Other molds are fine too, but you will need to be a bit more careful when turning them over.

Once lukewarm, let them cool in the refrigerator for at least a couple of hours.

With the help of a spatula or a smooth knife, gently detach the edges from the mold and flip the chilled dessert onto a single plate or serving tray.

Serve the Chilled Watermelon Pulp cold, and if desired, decorate with the seeds removed earlier. It’s excellent not only at the end of a meal because it’s very refreshing, but also as a snack.

Tips and Storage

You can store the Chilled Watermelon Pulp for a few days, but I recommend covering it with plastic wrap to avoid picking up bad odors and flavors.
