Colorful Castagnole in Air Fryer are very easy and cute to make and won’t give you any bad smell problems because they won’t escape the machine. In 6 minutes of cooking, you’ll get delicious and very dry castagnole that will be decorated not with granulated sugar but with powdered sugar. The ingredients are the same, but the oil for frying is completely saved because they cook with barely two teaspoons of extra virgin olive oil. Just go ahead and try them now!

Ingredients
- 1 1/4 cups flour
- 3 tbsps sugar
- 1 egg
- 1 tbsp rum
- Half lemon zest
- 1 tsp baking powder
- 1 tsp turmeric powder

- 2 tsps extra virgin olive oil (3/4 sprays)
- 2.5 tbsps extra virgin olive oil

How to Prepare Colorful Castagnole in the Air Fryer
To prepare the Colorful Castagnole in the air fryer, arrange all the pre-measured ingredients on your work surface.
In this way, your work will be easier and faster.
Pour the egg and sugar into a bowl and whisk a little by hand.
Then add the rum, extra virgin olive oil, and lemon zest, and mix.
Finally, incorporate the flour mixed with baking powder, sifting it to avoid forming those annoying lumps, and mix all the ingredients well.
Once the mixture is ready, pour it onto the work surface, knead it for a few minutes, form a ball, and divide it in two.
Open one half and add a teaspoon of turmeric in the center, fold each half over itself, and knead until an even color is obtained.
Form a loaf, wrap it in plastic wrap, and let it rest in the refrigerator for at least half an hour.
Now perform the same exact operation, but using beetroot powder this time.
For brighter colors that remain so even after cooking, you can use gel food coloring, but remember they aren’t as natural as those extracted from vegetables.
After this time, take them out and form two rolls with each loaf: handle the dough as you would for gnocchi, cutting them if possible into equal, as regular as possible parts.
At this point, form balls with the palms of your hands and place them inside the air fryer basket, which has been preheated for 3 minutes to 390°F.
Spray the colorful balls with 3/4 sprays of extra virgin olive oil.
Shake the basket a little, insert it into the machine, and cook at 390°F for 6 minutes.
Halfway through cooking, open and shake to turn them over.
Serve your Colorful Castagnole in Air Fryer, only after placing them on a plate and dusting them with powdered sugar.
Tips, Variations, and Storage
The Castagnole can be stored in an airtight container, preferably glass, for about 5 days.
Alternatively, you can use a paper bag for bread.
Since they are cooked with very little oil, they cannot be rolled in granulated sugar, but only dusted with powdered sugar.
The air fryer won’t get dirty, but if you want to be more meticulous, you can use a sheet of baking paper.
