Ingredients

  • 1.3 lbs chicken breast
  • 1 lemon juice
  • to taste fresh/dried aromatic herbs
  • 1 tbsp extra virgin olive oil
  • 2 eggs
  • to taste breadcrumbs
  • to taste corn flakes
  • to taste salt
  • to taste peanut oil

How to Prepare Crispy Chicken Breast Fillets

First, with a sharp knife, cut the chicken breast close to the small bones and go down to the piece of cartilage, so you can clean it well.

Cut the breast into fairly thick fillets, and place them gradually into a large bowl.

Dust them with a mix of fresh or dried aromatic herbs (thyme, marjoram, mint…), add a tablespoon of extra virgin olive oil and mix.

Season with salt, pour the lemon juice over and mix all ingredients.

Leave to marinate for only about thirty minutes, so that the fillets are well flavored.

Beat the eggs with a pinch of salt, dip the chicken pieces in them, draining them if necessary from the marinade, and coat them in the breadcrumb and corn flakes mixture you have prepared.

As they are ready, arrange them on a plate.

Pour plenty of peanut oil into a high-rimmed pan, and once it is hot, dip the chicken croquettes in it.

Adjust according to the size of the pan, because if you put too many, the oil will tend to overflow.

Turn them at least once, and when they are well browned, remove them and place them immediately on a plate lined with paper towels.

Advice and Storage

You can store the chicken croquettes in the refrigerator for up to two days, but in an airtight container, preferably glass or ceramic.

Do not reheat them in a traditional oven, but in a microwave because otherwise, they would dry out too much.

If you do not like corn flakes, you can coat the croquettes with cornmeal, perhaps the more granulated kind.
