If you can’t find small-sized corn flakes like I did, no problem because you can always crush the larger ones, but only coarsely. As for the aromatic herbs, feel free to use your favorites, even if they are dried, but do not omit them as they make the chicken breast tasty and fragrant.

How to Prepare Crispy Chicken Breast Fillets
First, with a sharp knife, cut the chicken breast meat near the small bones and down to the piece of cartilage, so you can clean it well.
Cut the breast into fairly thick fillets, and place them gradually into a large bowl.
Dust them with a mix of fresh or dried aromatic herbs (thyme, marjoram, mint…), add a tablespoon of extra virgin olive oil and mix.
Season with salt, pour lemon juice over them, and combine all the ingredients.
Let them marinate for just about thirty minutes, so the fillets are well flavored.
Beat the eggs with a pinch of salt, dip the chicken pieces in them, drain if necessary from the marinade, and bread them in the breadcrumb and corn flakes mixture you have prepared.
As they are ready, place them on a plate.
Pour a generous amount of peanut oil into a high-sided pan, and once it becomes hot, immerse the chicken nuggets in it.
Adjust according to the size of the pan, because if you put too many, the oil will tend to overflow.
Turn them at least once, and when they are well browned, remove them immediately placing them on a plate lined with paper towels.

Tips and Storage
