The Croatian Meatballs Cevapcici are delicious, but after asking several women for the recipe during my market wanderings, I realized each had their own version. So I decided to prepare the one that seemed the most popular: the result was truly excellent…

Ingredients
- 7 oz Ground beef
- 7 oz Ground pork
- 7 oz Ground lamb
- 1 medium onion
- 1 clove Garlic
- to taste Salt and pepper
- as needed Extra virgin olive oil
Preparation
Place all the mixed ground meat in a large bowl and season with salt and pepper.
Add the chopped garlic and onion, and mix well.
Cover and let rest for 10 minutes.
Take a tablespoon of the mixture and shape it with your hands into a meatball.
Roll it on a cutting board to form a cylinder.
Each meatball should be approximately 3/4 inch by 3 inches.
At this point, you need to decide, depending on your resources, the cooking method: grilled, baked, pan-fried…
In this case, having no better option, I cooked them in a pan, first browning them with a few tablespoons of extra virgin olive oil.
Finally, as a personal touch, I deglazed them with 3 tablespoons of red wine.
Serve your Croatian Meatballs Cevapcici, either hot or at room temperature.
Notes
Tip: if you decide to grill them, skewer them; this will make them easier to turn. If made smaller, they can be served during an aperitif. They are also perfect for a picnic…the most important thing not to underestimate: they are very fast to prepare…
