Crostini with Pan-Cooked Cherry Tomatoes

Crostini with Pan-Cooked Cherry Tomatoes are a delight and quickly solve a summer meal. This is a very simple dish, with a Mediterranean taste and aroma, which, if served in small portions, can also be served as an appetizer or in a cold buffet. I used primo sale because I find it more delicate, but you can substitute it with brie or another type of soft cheese. This recipe is also very suitable and delicious for vegans, as you just need to remove the traditional cheese and opt for the Vegan Primo Sale. What are you waiting for? Prepare it immediately, because lappetitovienmangiando.

Ingredients

  • 12 ripe cherry tomatoes
  • 1 clove garlic
  • 2 tablespoons extra virgin olive oil
  • to taste salt
  • 2.1 oz primo sale cheese
  • to taste dried oregano

Tools

  • 1 Skillet

How to Prepare Crostini with Pan-Cooked Cherry Tomatoes

First, peel a clove of garlic, chop it into pieces, and place it in a non-stick skillet with the extra virgin olive oil.

After washing and drying the cherry tomatoes, add them to the skillet, add salt, stir, cover with a lid, and cook over medium heat until the tomatoes have softened.

Meanwhile, place the cheese in a bowl, mash it with a fork, and season it with oregano.

Cut the sandwich bread slices in half, and toast them in a preheated oven at 350°F for a few minutes, or in a non-stick pan on the stovetop.

Slightly crush the cherry tomatoes with a spoon, and arrange the bread on a tray or individual plates.

Top them with the primo sale cheese seasoned with oregano, the chilled or room temperature tomatoes, and finally drizzle them with the cooking juices.

Serve your Crostini with Pan-Cooked Cherry Tomatoes, after sprinkling them with torn basil leaves.

Tips, Variations, and Storage

The crostini cannot be stored for long, not even in the refrigerator, as they would lose their crunchiness.

However, you can prepare all the ingredients beforehand and assemble them at the last minute, just before serving.

If you don’t like primo sale, you can substitute it with brie, or any soft cheese.
