Crostini with Squid and Tomato

Ingredients

  • 7 oz cleaned squid
  • 7 oz fresh tomato
  • 1 large clove garlic
  • 1 bunch parsley
  • 3 tbsps extra virgin olive oil
  • to taste salt

Preparation

Take the cleaned squid out of the fridge to bring them to room temperature and pat them dry with paper towels. Use a sharp knife to slice them into thin rings, so they cook quickly. Finely chop the garlic and fresh parsley and peel a red tomato (the video shows that the process does not require blanching the tomatoes), then cut it into pieces.

Pour the extra virgin olive oil into a non-stick pan along with the parsley and garlic mixture, and sauté. Immediately add the squid and keep the heat high, letting them cook for about 5 minutes. Turn off the heat and set them aside on a plate.

In the same pan, add the tomato, but only after squeezing it to remove as much water as possible. Cook for about ten minutes, adjust the salt, and when it starts to thicken, add the squid to the sauce. Let it flavor for a few more minutes, keeping the heat high.

Slice the bread, drizzle it with extra virgin olive oil, and toast it for a few minutes. It should be crispy on the outside and soft on the inside. Arrange the crostini on a serving plate and top with the squid rings.

Tips and Storage

We can keep the crostini for at least one day in the refrigerator, but inside an airtight glass or ceramic container.

If we want to prepare in advance for a planned event, we can prepare everything the day before and assemble at the last moment.

The squid, seasoned and cooked in this way, can also be frozen, but remember to always defrost them in the refrigerator and never at room temperature to avoid food poisoning.
