The Goat Cheese and Sun-Dried Tomato Paté is perfect for spreading on crostini, crackers…, making it ideal when served as an appetizer. The typically Mediterranean flavor given by the tomatoes, basil, and extra virgin olive oil makes it absolutely irresistible. Also great spread on a slice of homemade whole grain bread for a snack.

Ingredients
- 3.5 oz fresh spreadable goat cheese
- 15 Sun-dried tomatoes in oil
- 3 sprigs Basil
- 1 tbsp Extra virgin olive oil
- 2 tbsp Ice-cold water
Preparation
Wash and dry the basil sprigs.
Drain the sun-dried tomatoes well if they were not stored in extra virgin olive oil.
Chop them coarsely, place them in the blender, and mince them.
After a few seconds, add the goat cheese, basil, one tablespoon of extra virgin olive oil, and blend everything.
If necessary, also add 2-3 tablespoons of ice-cold water.
The cream should be smooth and fluffy… in any case, even if it remains a bit coarse, don’t worry, it will still be excellent.
Serve by spreading the Goat Cheese and Sun-Dried Tomato Paté on crackers or slices of toasted bread.
Notes
Tip: if you are expecting guests, you can prepare the goat cheese and sun-dried tomato paté in advance. In the refrigerator, covered by food wrap, it will keep for several days.
