The Gorgonzola, Pear, and Walnut Cream is delicious spread on toasted bread, but equally delicious as a pasta sauce. It’s so easy and quick to prepare that you can make it at the last moment, without refrigerating it. In case of a planned event, you can also prepare it one or two days in advance. Since there are a lot of walnuts in the cream, you don’t necessarily need to put half a walnut on each crostini. I used it to make the photo more appealing. If it’s a buffet, I recommend using small baguettes to slice and toast, turning the small crostini into finger food.

- 12 oz Abate pear
- 9 oz Gorgonzola cheese
- 2.5 oz grated Parmesan cheese
- 1 oz walnuts
- Half lemon juice

How to prepare Gorgonzola, Pear, and Walnut Cream
To prepare the Gorgonzola, Pear, and Walnut Cream, organize your workspace with all the ingredients already measured.
Remove the skin and the core of the pears, and chop them into very small pieces with a sharp knife.
Place them in a small bowl and drizzle with the juice of half a lemon to prevent them from turning black due to oxidation.
Put the Gorgonzola in a bowl, remove the hard outer part, and mash it well with a fork to make it creamy.
Since I love this type of cheese so much, for my personal taste I made it a bit spicier by using only 200 grams of classic Gorgonzola and 50 grams of spicy one.
Add grated Parmesan and continue mixing.
Finally, add the pears, coarsely chopped walnuts, and mix well.
Cover the bowl with plastic wrap in contact and let it rest in the fridge for at least an hour.
Serve your Gorgonzola, Pear, and Walnut Cream on toasted bread crostini.
Tips, Variations, and Storage
The cream can be stored in the refrigerator, but only for one or two days, and must be sealed tightly in a glass or ceramic container.
If you prefer a milder flavor, you can remove some grams of Gorgonzola and add a soft cheese.
