Grated Apple Pound Cake is a super quick and easy apple cake, which you will gladly eat not only for breakfast or a snack. An almost zero-waste recipe, because it uses unpeeled apples, ideal for the health of our intestines. The granulated sugar placed on top and over the slices gives it that touch of crunchiness that makes it even more irresistible. I add lemon juice not only to prevent the apples from oxidizing as much as possible, but especially because I’m attracted to the taste and aroma of this citrus fruit. If you don’t like it, you can replace it with something else, maybe adding a bit of cinnamon, rather than a good grate of ginger. In any case, it will be delicious.

Ingredients
- 2 1/2 cups whole wheat flour
- 1/3 cup cornstarch
- 3 medium eggs
- 1/2 cup sugar
- 1/2 cup extra virgin olive oil
- 1/2 cup water
- 2 large apples (about 18 oz)
- 1 lemon zest and juice
- 1 packet baking powder

Preparation
Wash the apples thoroughly, dry them, cut them open, remove the core, and grate them coarsely. Drizzle with the juice of a lemon, but not before grating its zest.
In a large bowl, beat the eggs with the sugar, add both the grated lemon zest and the extra virgin olive oil and mix all the ingredients.
Finally, add both the flour and the baking powder, but sifted to avoid lumps. Add the grated apples, incorporate them well into the mixture, and then pour everything into a pound cake mold measuring 10×5 inches.
We can decorate the surface with a few apple slices set aside and sprinkle generously with sugar. Preheat the oven to 356°F, static mode, and bake for 40 minutes. In this case, to check for doneness, it’s not possible to do the toothpick test because the inside will remain moist due to the apples. Therefore, judge by color: once risen and golden, it will be ready. After the necessary cooking time, turn off, let it cool slightly, and then place the pound cake on a cooling rack to cool it quickly and lose excess moisture.
Serve our Grated Apple Pound Cake in slices and if you like, decorate it with powdered sugar, although it’s not necessary.
Tips and Storage
The pound cake can be stored in an airtight container, preferably glass, or even in a paper bag for bread.
If there are any leftovers, even a bit dried out, slice it and toast it in the oven for a few minutes until it has lost as much liquid as possible.
