Guitar Spaghetti with Clams, Zucchini, and Shrimp is a delicious recipe. My mom used to make it often when we lived in Riccione because it was a Sunday tradition to make homemade pasta. I have always loved this tradition, so much so that I still carry it on today…on holidays, I always get my hands in the dough. These flavorful and delicate dishes are a main course that always makes a good impression and is usually enjoyed by everyone. If you love Pecorino Romano cheese like me, try sprinkling these Guitar Spaghetti with Clams, Zucchini, and Shrimp with some grated Pecorino Romano…I would put it on everything.

- 500 egg guitar spaghetti
- 1.3 lbs hard-shell clams
- 7 oz shrimp
- 14.1 oz Roman zucchini
- 4 tbsps extra virgin olive oil
- 1 clove garlic
- to taste salt and pepper

Preparation
First, organize your workspace with all the ingredients already measured so that you have everything at hand.
Place the clams in a large bowl, add cold water, a handful of salt, and let them soak for about 2 hours.
In the meantime, shell the shrimp, remove the intestine using a toothpick, wash them, and store them in the refrigerator.
Wash the zucchini, dry them, and cut them into fairly small pieces so that they can absorb the flavor well.
Sauté them in a non-stick pan with extra virgin olive oil, cooking them just enough to remain crispy.
Now move on to the clams, rinse them well, place them in a high-sided pot, and cover with a lid.
Cook over high heat for a few minutes, just until the shells open up well.
Turn off the heat, and once they have cooled slightly, shell them and strain the cooking liquid through a sieve, placing everything in a bowl.
Pour the clams into the pan with the zucchini and some liquid, along with the shrimp.
At this point, taste to see if salt is needed and add a grind of fresh pepper.
Boil the guitar spaghetti, but without adding salt to the cooking water.
Once cooked, toss them over high heat in the pan containing all the sauce.
If necessary, add more clam liquid and oil
Serve your Guitar Spaghetti with Clams, Zucchini, and Shrimp immediately.
Tips and Variations:
To ensure that there are no clams full of sand, once the soaking time has elapsed, before washing them, drop them one by one into the sink from a height of at least 8 inches.
In this way, the damaged ones will open when they fall and will not spoil the rest of the sauce.
You can prepare the sauce for the Guitar Spaghetti with Clams, Zucchini, and Shrimp, also the day before, but keep it in the refrigerator.
