The Hard-Boiled Eggs with Mayonnaise and Smoked Salmon are super easy to make, very quick, amazingly tasty, and super fresh. In fact, it is a dish that pairs well with hot summer days, and you can eat it straight from the fridge. Additionally, even though in this case I stuffed them with smoked salmon, they are still predisposed to be filled with anything else you desire. You can always opt for shrimp, the already peeled ones in brine, lumpfish caviar, salmon caviar, or other types of smoked fish, basically neutral and good with everything. Always keep some hard-boiled eggs in the fridge, unpeeled, ready to be stuffed at any time because it helps a lot when you have emergencies. Additionally, hard-boiled eggs, if well preserved, last about a week in the fridge, and since you can eat up to 4 a week, why not do it?

How to Prepare Hard-Boiled Eggs with Mayonnaise and Smoked Salmon
To prepare Hard-Boiled Eggs with Mayonnaise and Smoked Salmon, organize the workspace with all necessary tools and pre-measured ingredients.
This way, you will have everything at hand, and your work will definitely be easier.
Place the eggs in a small pot, cover them with water and cook them for about 8/10 minutes from the moment they start boiling.
Turn off the heat, drain them, place them under cold water, and let them cool.
Peel them, cut them in half, remove the yolks, put them in a bowl, and mash them well with a fork.
Add the mayonnaise (start with 2.8 oz), chopped parsley, and mix until you get a sort of grainy cream.
Chop the smoked salmon into pieces, leave some aside for decoration, while the rest is mixed into the mayonnaise cream.
Place the egg whites on a serving tray and use a teaspoon to distribute some filling on each.
Refrigerate for about thirty minutes.
Serve your Hard-Boiled Eggs with Mayonnaise and Smoked Salmon, decorating with the reserved smoked salmon pieces, and sprinkle with grated lemon zest.
Tips, Variations, and Storage
You can store the stuffed hard-boiled eggs for a day, but inside a glass or ceramic container with an airtight seal.
Once you take them out of the fridge, you will notice that their appearance has changed, but not the flavor.
For this reason, I recommend storing whole hard-boiled eggs and the stuffing in a small bowl covered with cling film.
This way, when you assemble them, they will be not only good but also beautiful to present.
If you don’t like salmon, you can also opt for shrimp or another type of smoked fish.
