Marinated Chicken Skewers with Pine Nuts, an incredibly easy main course even for those with little kitchen experience. Quick not only to prepare but also to cook, as it takes just 5 minutes to be done. They are so tasty that they’re perfect for the hottest time of the year, as they are delicious not only hot but also at room temperature. So you can perhaps prepare them in the morning, put them in the refrigerator and take them out about twenty minutes before serving. The lemon, both the juice and especially the zest, gives the dish a pure sense of freshness.

- 1.5 lbs chicken breast
- 1 lemon juice and zest
- 2 tbsps extra virgin olive oil
- 2 tsps dried oregano

Preparation
First, take the chicken breast out of the refrigerator to bring it to room temperature and pat it dry with paper towels to remove any excess moisture. If our trusted butcher hasn’t sliced it for us, we need to remove the cartilage and central bone with a sharp knife.
Separate the tenderloin from both sides, cut everything into strips at least half an inch thick, and arrange them on a plate.
At this point, add the extra virgin olive oil, the grated zest of one lemon, and its juice.
Also add the salt, oregano, and mix well to distribute all the ingredients evenly.
Now cover the plate with plastic wrap and marinate in the refrigerator for at least 30 minutes. After this time, take the strips and thread them onto wooden skewers: two on each stick. Once the skewers are ready, place them in a non-stick pan over medium-high heat (I used a flatbread pan), but not too high.
Turn them often to ensure they cook without burning: it will take about 5 minutes. Halfway through cooking, sprinkle them with pine nuts. Turn off the heat and place on a serving plate.

Tips and Storage
You can keep the marinated skewers, either raw or cooked, for two days in the fridge in an airtight container, preferably glass or ceramic.
Similarly, you can also freeze them, but always defrost them in the fridge to prevent them from being attacked by harmful bacteria and to maintain their organoleptic properties.
