Marinated Chicken Skewers with Pine Nuts

Marinated chicken skewers with pine nuts, an incredibly easy main dish even for those with little kitchen experience. Quick not only to prepare but also to cook, as it takes just 5 minutes and you’re done. They are so tasty that they are ideal even during the hottest time of the year, because they are delicious not only hot but also at room temperature. So, you can prepare them in the morning, put them in the fridge, and take them out about twenty minutes before serving. The lemon, both the juice and especially the zest, gives the dish a sense of pure freshness.

Ingredients

  • 1.54 lbs chicken breast
  • 1 lemon juice and zest
  • 2 tbsps extra virgin olive oil
  • 2 tsps dried oregano
  • to taste salt

Preparation

First, take the chicken breast out of the fridge to bring it to room temperature and dry it with paper towels to remove any moisture. If we haven’t had slices made by our trusted butcher, we just need to remove the little tough piece and the central bone with a sharp knife.

Detach the tenderloin from both sides, cut everything into strips at least a centimeter thick, and arrange them on a plate.

At this point, add the extra virgin olive oil, the grated zest of a lemon, and its juice.

Add the salt, oregano, and mix well to distribute all the ingredients.

Now, cover the plate with plastic wrap and let it marinate in the fridge for at least 30 minutes. After this time, take the strips and thread them onto wooden skewers: two on each stick. Once the skewers are ready, place them in a non-stick pan over medium-high heat (I used a griddle for flatbreads), but not too high.

Turn them often so they cook evenly and don’t burn: it will take about 5 minutes. Halfway through cooking, sprinkle with pine nuts. Turn off the heat and place them on a serving dish.

Tips and Storage

You can keep the marinated skewers, either raw or cooked, for two days in the fridge but inside an airtight container, preferably glass or ceramic.

You can also freeze them the same way, but always defrost them in the fridge to prevent them from being attacked by toxic bacteria and losing their organoleptic properties.
