How to Prepare Marinated Red Beets

In this recipe, nothing from the red beets should be discarded; they should only be washed thoroughly to remove any dirt residues.

Once washed, plunge them into a pot with boiling water and cook for about 40 minutes.

Meanwhile, prepare the marinade: pour the white wine vinegar, water, sugar, and grated lemon zest into a small pot.

Finally, add the coriander seeds, a pinch of salt and mix well

Cook for about twenty minutes over medium-low heat until the liquid is reduced by half.

Once ready, let it cool slightly and taste, adjusting with salt only if necessary.

Once the red beets are cooked, drain them and let them cool down.

Then cut each into 4 pieces, arrange them on a plate, and dress them with all the marinade you prepared.

Let them marinate for at least two hours, turning them occasionally.
