Meatloaf with Leeks and Olives

The Meatloaf with Leeks and Olives, I prepared it last Saturday with my niece Matilde. It’s a very tasty recipe, created with what we had in the fridge… excellent result, finger-licking good. To speed things up, I used a pressure cooker, but if you prefer the classic cooking method, just double the cooking time to 40 minutes.

Meatloaf with Leeks and Olives

Ingredients

  • 1.3 lbs mixed ground meat
  • 2 eggs
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup breadcrumbs
  • 4 tbsps milk
  • to taste salt
  • 1 large leek
  • 1 sprig rosemary
  • 20 Gaeta olives
  • 1 clove garlic
  • 3 leaves sage
  • 4 tbsps extra virgin olive oil

Preparation

  • First of all, organize your workspace with all the ingredients already measured out, so you have everything at hand.

    In a large bowl, add the meat, eggs, milk, as well as the breadcrumbs, and Parmesan, and mix well because all the ingredients must blend perfectly.

    Shape the meatloaf with your hands, roll it lightly in breadcrumbs, and set it aside directly in the pressure cooker because now you will need to focus on the seasoning.

    Finely chop the herbs, garlic, and leek, and place everything in the pressure cooker along with the Gaeta olives, 4 generous tablespoons of extra virgin olive oil, and 100 g of water.

    Seal tightly, place the pot directly on high heat, but as soon as you hear the whistle, turn it down because it means it has reached the right pressure, and let it cook for about 20 minutes.

    After this time, do not open it, but let it cool slowly because this way, when you remove the meatloaf, it won’t break.

    Finally, if necessary, remove the meatloaf, and if the seasoning is too liquid, let it cook further so that the excess water can evaporate.

    Serve your Meatloaf with Leeks and Olives, sliced, on a serving plate with all the seasoning beautifully displayed.

Advice: You can also prepare the meatloaf in advance, but keep it in the refrigerator.
