Oven-Baked Grape Chutney

Ingredients

  • 2.2 lbs seedless red grapes
  • 1.8 oz red wine
  • 2.8 oz white wine vinegar
  • 2.8 oz sugar
  • 2.1 oz extra virgin olive oil
  • a pinch of salt

How to Prepare Oven-Baked Grape Chutney

Remove the grapes from the stem and place them in a bowl full of water, so that all the impurities soften.

Then rinse them under running water and dry them.

Place all the grapes inside a deep baking dish, add the red wine and extra virgin olive oil.

Add the sugar, salt, and white wine vinegar as well.

At this point, mix all the ingredients well and bake in a preheated oven at 356°F.

Cook for about an hour, or until the grapes are shriveled and the juice is reduced by at least half.

During cooking, the grapes will release their water, and it is this water that needs to reduce as much as possible until it becomes creamy.

Once the chutney is cooked, turn off the heat, let it cool, place it in an airtight jar, and store in the refrigerator, ready to use.

The Chutney can be stored in the refrigerator for several days because it is rich in sugar and vinegar, but it should be sealed in a glass or ceramic airtight container.
