Oven-Roasted Radishes

The Oven-Roasted Radishes are delicious, rich in vitamins, and particularly have diuretic properties. Obviously, I recommend buying the freshest ones: you can easily recognize them by their leaves, which should be firm, very green, and not yellowed and wilted. I like them both raw and cooked, but obviously during cooking, they lose a lot of their organoleptic properties, unless steamed. In any case, I recommend trying them cooked, as they are very delicate… additionally, they lose all their spicy part this way. It is a typical Spring/Summer vegetable, but nowadays it can be found all year round.

How to Prepare Oven-Roasted Radishes

To prepare the Oven-Roasted Radishes, very few ingredients and little time are needed.

Remove the tuft formed by the leaves, but do not throw it away, as it is really good raw in a salad, or cooked.

Soak them for a few minutes, and wash them thoroughly under running water, ensuring that all earthy residues are removed.

Dry them with a kitchen towel, and arrange them in a baking dish well spread out, making sure they do not overlap.

Drizzle them well with extra virgin olive oil, salt, and pepper according to your taste.

Mix well and put them in the oven, but in an already preheated oven at 356°F, letting them bake on a fan setting for about 30 minutes, or until they have wilted.

The cooking time, depending on the oven, may vary by 5 minutes more or less, because each oven is different from another.

Once cooked, you can serve your Oven-Roasted Radishes, very hot, or at room temperature… the result will always be excellent.

Tips and Storage

Oven-Roasted Radishes can be perfectly stored in the refrigerator for a few days.

If you cannot cook them immediately, after washing, place them in a glass jar filled with water, then sealed tightly: this way, they will remain crunchy for several days.

You can also freeze them in food bags, but make sure to put them directly in the oven from frozen.

This way, they will not lose their consistency.
