Pasta with Pumpkin



Pasta with Pumpkin and pistachios: it is a recipe with a very delicate, sweet flavor, but strengthened by extra virgin olive oil, bacon, and especially Pecorino Romano. With this dish, we feel the explosion of autumn that surrounds us, because pumpkin represents it very well. Low in calories and sugars, the pumpkin is instead rich in carotenes, provitamin A, vitamin C, iron, phosphorus, magnesium, and potassium. So eat plenty of it, cooking it in various ways, and fill up on health.

Ingredients

  • 14 oz Mezze Maniche Rigate
  • 1.1 lbs Butternut Pumpkin, peeled and cleaned
  • 1.8 oz Pistachios, shelled
  • 1 bunch Sage
  • 2 cloves Garlic
  • 6 tbsps Extra virgin olive oil
  • to taste Salt and pepper
  • 8 slices Bacon (thin cut)
  • to taste Grated Pecorino Romano (optional)

  • 2 Pans Non-stick
  • Peeler

How to Prepare Pasta with Pumpkin

  • To prepare Pasta with Pumpkin, organize your workspace with all the ingredients pre-measured, so everything is at hand.

    Cut the pumpkin into small cubes, after peeling and cleaning it.

    Sauté it in a large, high-sided non-stick pan with 4 tablespoons of extra virgin olive oil, chopped garlic, a bunch of sage, salt, and pepper, to flavor it well.

    At this point, add a full glass of water, so it softens well during cooking, as this type of pumpkin does not contain much liquid.

    Let it cook for about twenty minutes, or until, when touched with a spoon, you feel its softness.

    In the meantime, shell the pistachios, place them between two sheets of paper towel, and crush them coarsely with the bottom of a glass.

    In another small non-stick pan, sauté the bacon cut into strips, but as soon as it is golden, remove it immediately, as it will become crispy once cold.

    After cooking the pasta, pour it into the pan and toss over high heat, adding half of the pistachios and mix well.

    Serve your Pasta with Pumpkin, garnishing it with the remaining pistachios and crispy bacon.

    If desired, you can enjoy it with grated Pecorino Romano.

Notes

Tips and variations:

You can prepare the pumpkin sauce in advance, but not the bacon, as it would lose its crispness.

To peel the pumpkin better, you can use a classic vegetable peeler.
